Opening this season in the Kullu valley · Now taking table requests

Our story

Every place needs
a middle.

Darmiyana was never meant to be the smartest room in the valley, or the quickest. It was meant to be the one you can actually use.

The word

दरमियाना · درمیانہ

Darmiyana is an everyday Urdu and Hindi word. It means in between — the middle, the moderate, the one that sits between two things. It is also the word for give-and-take: the easy middle of a conversation, a negotiation, a friendship.

In a valley that word stops being a mood and becomes a map reference. Kullu is a place that is permanently in between: between the orchards on the valley floor and the deodar above it, between the plains everyone drives up from and the passes everyone drives on to.

We kept failing to find the café that belonged to that middle. Down the road you can eat quickly, or you can eat formally. The hours in between are harder. The ten o'clock coffee. The long lunch after a walk. A table where you can open a laptop and also bring your parents.

So we took the word literally. An all-day café and kitchen that sits deliberately between a dhaba and a fine-dine: real cooking, honest portions, a fire in winter, and a room you can stay in when the weather turns.

The mark

Why a leaf grows
out of the D.

The D is set in a high-contrast Didone — the letterform of menus, journals and old shopfronts. Through its stem grows a single sprig, drawn as one unbroken line.

It is there for two reasons. First: a café in a valley should feel grown rather than built — something rooted in the slope it stands on. Second: the sprig is the “in between” made visible, a green thing pushing through a formal letter.

The Darmiyana emblem — a leaf sprig growing through the letter D

How we cook

Four things we don't compromise on

01

Himachal, cooked properly

Siddu, chana madra, babru, aktori, local trout. The valley's own food, made the way the valley makes it — not a tourist version.

02

A wood-fired oven

Slow-risen dough, a hot stone floor, ninety-second bakes. The oven is the centre of gravity of the kitchen, summer and winter.

03

Coffee worth the altitude

Fresh beans, weighed shots, milk steamed per cup — because at 2,150 metres everything behaves differently and the coffee still shouldn't.

04

A seat that stays yours

No rushing the table. Water refilled, wi-fi that works when the weather allows, and a corner where nobody minds if you stay until the fire dies.

Where we are

The Kullu valley

We are building in the Sainj Valley, in the lower Himalaya — the stretch that has orchards on one side, the Beas on the other, and far too few places to sit down in.

Himachal eats well and travels far for it. We would rather it didn't have to. Darmiyana is a bet on this stretch of road: that if you build a good room, light a fire and cook properly, people will come the way they already do everywhere else.
